These are my favorite cookies to make this time of yea r! Whipped Shortbread 1 pound butter 1 cup powdered sugar 1 teaspoon vanilla pinch salt 1/2 cup cornstarch 3 cups all-purpose flour Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. Decorate with candied cherries or dragees if desired. Bake 12-15 minutes. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool co mpletely. Store in an airtight container at room temperature.

I make an awesome Baked Apple Oatmeal that I got from my Healthy Heart Cookbook. I don't even like oatmeal but this recipe I LOVE! 2 2/3 c old-fashioned oats 1/2 c raisins 1/3 c packed brown sugar 1 tsp cinnamon 1/4 tsp salt 4 c fat-free milk 2 medium apples or pears chopped (2 cups) 1/2 c chopped walnuts Heat oven to 350. Mix oats, raisins, brown sugar, cinnamon, salt, 4 cups of milk and the apples in a 2 quart casserole. Bake uncovered 40-45 minutes or until most liquid is absorbed. Sprinkle walnuts over top and serve with additional milk.

HAPPY SEPTEMBER!!! Summer is coming to an end and it is now time for me to get back to work....not that I haven't been working...it's just time to get serious now. I custom created this diaper cake design for Michelle in Hamburg, NJ. Michelle wanted a diaper cake based off of some of her favorite children's board books....Guess How Much I Love You and the Going To Bed Book. I had a blast creating this cake! Created with a mix of Pampers Baby Dry, Pampers Swaddlers and Seventh Generation Chlorine free disposable diapers. Also includes a custom sewn fleece blanket and scarf in moon & stars pattern, sock rosettes and custom painted embellishments. Weighing in at 9 pounds and standing nearly 2 feet tall...I hope this cake is cherished as much as I cherished making it:)

Isn't he BEAUTIFUL!!! I am an avid collector of Breyer horses and I am so excited for this Holiday 2009 release! I started collecting when I was three years old when I received my first Breyer ....a Mustang. Since then I have been hooked on the beauty of these model horses. Now my son is three and he loves my Breyer horses. So, this Christmas I will b e getting him his first Breyer and I am choosing Little Bubb from Justin Morgan Had a Horse..... There is a field with two horses in it. From a distance each looks like every other horse. But if you stop your car, or are walking by, you will notice something quite amazing. Looking into the eyes of one horse will disclose he is blind. His owner has chose to not have him put down and has made a good home for him. This alone is amazing. If nearby and listening you will hear the sound of a bell. Looking around for the source of the bell you will see it comes from the smaller horse in the field. Attached to her halter is a small bell. It let's her blind friend know where she is, so he can follow her. As you stand and watch these two friends, you'll see how she's always checking on him, and that he will listen for her bell, and slowly walk to where she is, trusting that she will not lead him astray. When she returns to the shelter of the barn each evening, she stops occasionally and looks back, making sure her friend isn't to far behind

I made the most delicious vegetable lasagna for dinner tonight and so I thought I would share my recipe! 1 cup of carrots 1 cup zucchini (I use baby zucchini) 2 cups spinach 1 cup cottage cheese 1/2 cup ricotta 2 large eggs 1 tsp. basil 1 tsp. oregano 1 tsp black ground pepper 1 Jar of marinara sauce 1 package Barilla no boil Lasagne rolled flat like homemade Steam carrots over boiling water for 2 minutes, add zucchini and steam 2 more minutes, add spinach and steam 1 more minute. Combine cottage cheese, ricotta,eggs, basil, oregano, pepper To assemble: Place a little bit of sauce in casserole dish to coat bottom, add a layer of noodles, add layer of veggie mixture, top with cheese mixture, sauce and repeat ending with noodles. Spread sauce over top of lasagna sprinkle with mozzarella and bake at 350 for 40 minutes. ENJOY!
